On March 19, the Shaoxing Huangjiu House at the Luzhou International Exhibition and Convention Center was packed with distinguished guests. On the occasion of the opening of the 24th China International Wine Expo, the “Gu Yue Longshan Shaoxing Wine ‘14th Five-Year Plan’ Scientific Research and Application Results Press Conference,” jointly hosted by the China Alcoholic Beverages Association Huangjiu Sub-division, the Shaoxing Huangjiu Industry Association, Jiangnan University, the National Huangjiu Engineering Technology Research Center, the Zhejiang Traditional Shaoxing Huangjiu Science Research Institute, and Zhejiang Guyuelongshan Shaoxing Wine Co., Ltd., was held here. The event concentrated on showcasing 20 breakthrough achievements made by Guyuelongshan, together with Jiangnan University, during the “14th Five-Year Plan” period in the fields of huangjiu technology innovation and industrialized applications. With the power of science and technology, it activates the inner driving force of a thousand-year-old national brew; with the wisdom of innovation, it charts a new blueprint for high-quality development of the huangjiu industry.
Technology leads the way—Jiangnan University releases ten major R&D achievements
This is a centralized inspection of how science and technology empower a historic classic industry. At present, the huangjiu industry is at a critical stage of transformation and upgrading. On the one hand, the rise of “national-chic” trends and health-focused consumption provides a historic opportunity for the revival of huangjiu. On the other hand, issues such as consumer misconceptions and the fit between traditional processes and modern demands still need to be addressed. During the “14th Five-Year Plan” period, under the leadership of leading enterprises such as Guyuelongshan, the Shaoxing huangjiu industry, together with scientific research institutes including Jiangnan University, achieved systematic breakthroughs in areas including foundational research on huangjiu, intelligent brewing, and the discovery of health functions.
At the press conference, Liu Shuangping, deputy director of the National Functional Foods Engineering Technology Research Center and a professor at Jiangnan University, released the ten major scientific research achievements of Shaoxing huangjiu during the “14th Five-Year Plan” period. From the world’s largest microbe database for huangjiu brewing to the world’s first huangjiu super biobiochip; from building a fortress of intellectual property rights to demonstrating the healthy connotations of huangjiu—everything fully showcases the depth and breadth of technological innovation in Shaoxing huangjiu. Technology moves into practice—Guyuelongshan releases ten major application achievements
The value of technological innovation ultimately has to land in industrial practice. At the press conference, Bai Hong, deputy general manager of Guyuelongshan, released the ten major application achievements of Guyuelongshan during the “14th Five-Year Plan” period, vividly demonstrating how scientific research results move from the laboratory to the production line—turning “written achievements” into “market competitiveness.”
On the industrial implementation front, Guyuelongshan strengthens the foundation of quality with hard-core technology. A huangjiu industrial park with an investment of over 2 billion yuan has been completed, becoming the industry’s first 5G factory. It has been selected as an advanced intelligent factory in Zhejiang Province and a pilot for future factories, realizing “intelligent brewing, digital blending, unmanned logistics, and green production.” It has become a benchmark for the digital transformation of the historic classic industry. Meanwhile, the research team achieved a series of technological breakthroughs, including in situ selection and breeding of “Guyuelongshan No. 1 yeast,” the first comprehensive解析 of the microbial community in the jiuyao (starter), systematically constructing a scientific evidence chain for huangjiu health, and completing the construction of a huangjiu flavor network. As a result, huangjiu quality has been upgraded toward standardization and premiumization.
In the product transformation layer, Guyuelongshan responds to market demand with innovative products. The “Guo Niao series” is rich in more than 400 flavor compounds, and for the first time it discovered three lipid-lowering small peptides and six peptides that regulate alcohol metabolism—“getting drunk slowly and waking up quickly,” making it a flagship work among China’s high-end huangjiu; the “No High/Low series,” with three key traits—no caramel color, high alcohol content, and low sugar—precisely targets pain points for consumers. After more than one year on the market, its sales have exceeded 4.5 million bottles, becoming a new choice for younger consumer groups; the “Herbal series” liquor blends the dual health concepts of “huangjiu + herbs,” opening up a new track for Chinese wellness liquors. In addition, Guyuelongshan has also successively launched the “High-Strength Huangjiu” series—new products including the world’s first glutinous rice whisky “Chuan Yan Shi Jiu,” the Amber King, and the “Fu Guang series,” among others. Each product carries the latest technological achievements of Shaoxing huangjiu.
At the key juncture of a successful close of the “14th Five-Year Plan” and the start of the “15th Five-Year Plan,” Guyuelongshan has already mapped out a new blueprint for the “15th Five-Year Plan”: building the industry’s first future factory and first science-and-innovation park; developing new aging technology for controlling and intelligent brewing of huangjiu; clarifying the formation mechanism of Shaoxing huangjiu’s main flavor substances; and building a multi-tier large model for Shaoxing huangjiu. In the future, Guyuelongshan will take this press conference as a new starting point, continue to increase R&D investment, deepen cooperation among industry, academia, and research, and accelerate the cultivation of new quality productive forces, so that Shaoxing huangjiu—this cultural treasure of the Chinese nation—will shine even more brightly in the new era.
